This coconut and chocolate sponge cakes is very popular in Australia
INGREDIENTS
225g softened butter
175g caster sugar
2 eggs
6 table spones milk
1 teaspoon vanilla essence or extract
225g self-raising flour
For the icing: 115g icing sugar
1 tablespoon cocoa powder
2 tablespoons war water
30g dessicated coconut
METHOD
First,mix the butter and sugar in a bowl with a wooden spoon.
Next,beat the eggs.put them in the bowl and them add milk and vanilla essence.
After that,grease and line the baking tray.Pour in the mixture.
Then,bake the cake 25-30 minutes until it is golden brown. Take the oven and let it cool a little.
After,cut the cake into 7cm squares.
Then,add the sugar and cocoa in the small bowl.Add the water,to make smooth runny icing.
Finally, spread icing onto the top of each square.Sprinkle a little coconut over each one.
